Low FODMAP Zucchini Lasagna with Meat Sauce

Instructions

    Preheat oven to 325°F (165°C). Grease a 9x13-inch casserole dish.

    Pour enough tomato sauce to lightly coat bottom of dish. Layer zucchini slices in bottom.

    Heat oil in a large skillet over medium-high heat. Add beef, stirring until no longer pink, about 5 minutes.

    Add bell pepper and oregano. Stir in tomato paste, remaining tomato sauce, basil, and wine.

    Bring to a boil, reduce heat, and simmer 20 minutes, stirring frequently.

    Spoon a layer of meat sauce over zucchini. Add a layer of spinach, then mozzarella.

    Repeat layers: zucchini, meat sauce, spinach, mozzarella.

    Top with remaining Parmesan cheese.
